Clover Creek Cheese Cellar does many things that give their raw milk cheese a sumptuous creamy texture and expressive palate. They milk five types of cow- Jersey, Aryshire, milking shorthorn, Holstein and crossbreeds- which adds a level of complexity to their final product. Immediately after milking, hands, not paddles, are used to stir milk. Aging is done in proper caves lined with local sugar maple shelving.
